PALEO HUMMUS

They say when life hands you lemons, make lemonade. Well I'm not saying I've been handed lemons, but I am in a bit of a life limbo at the moment. One of my favorite songs says "don't worry 'bout what you don't know, life's a dance you learn as you go." I know this is true, but the unknown can sure be frustrating. Do you believe in psychics? I wish I did, because I'd be all over that. Well maybe not. What if my future isn't so bright? Just kidding, it is, because those lemons are going to be the best lemonade you've ever tasted, and I'll be sure to blog the recipe for you when I make it. I guess what I'm trying to say is that no matter where you are in life, enjoy it, because you won't get this time back. Right now I absolutely love training and seeing what my body is capable of. And I also love cooking and blogging for you. So for now I might not have a boyfriend, I might not know where I want to live in this world, I might not know what career path I want to take, but I do know that I'm happy, and I know that you will continue to benefit from my trials and multiple errors in the kitchen, so if you do nothing else, just be sure to come back to my blog when you need something healthy and insanely delicious to eat!

Paleo Hummus

Cooking 30 mins

INGREDIENTS

  • 1 head of cauliflower, chopped into florets
  • 1/4 cup olive oil
  • 2 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 cup tahini
  • 2 tbsp lemon juice
  • 4 cloves garlic, minced

INSTRUCTIONS

  1. Preheat oven to 500F
  2. In a bowl toss the cauliflower with 2 tablespoons olive oil and the cumin, paprika and salt
  3. Lay out on a parchment lined baking sheet and cook for 30 minutes
  4. Remove the cauliflower from the oven and transfer to your food processor
  5. Add 2 tablespoons olive oil and the tahini, lemon juice and garlic and blend until smooth
  6. Top with olive oil and paprika and serve with your favorite veggies
