CARROT AND CAULIFLOWER MASH

A quick post tonight.  As the week is coming to an end I've found that I'm eating heaps of protein and vegetables and haven't really purchased enough over the weekend to get me through.  I did however have some cauliflower and carrots in my fridge, and since I'm following paleo/zone at the moment I wondered if there was anything I could make with the two of them.  I'm a big fan of Multiply Delicious and came across this recipe and thought it sounded really yummy.  If you are an avid paleo follower you may have made cauliflower mash already, but this is a nice alternative with a bit more flavour!

INGREDIENTS
  • 1 head of cauliflower, washed and cut into pieces
  • 3 carrots, peeled and chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp rosemary
  • 1 tbsp thyme
  • 2 tbsp olive oil
  • Salt and pepper
INSTRUCTIONS
  1. Steam the cauliflower and carrots until soft and season with salt and pepper
  2. In a pan heat 1 tbsp of olive oil and sauté the onion, with garlic, herbs, salt and pepper until the onion is translucent
  3. Add all of the ingredients plus 1 tbsp of olive oil to your food processor and blend until smooth
